The folks at Orlando Magazine have been going through some changes in the past few years, namely appointing a new editor, the amazing Michele Walker, and losing their food critic, Joseph Hayes. My friend Catherine Walters took the reigns as publisher back in 2021 and somehow got it into her head that she’d love to have me join the crew with a new monthly food column. And if you know Catherine, there’s no saying no when she has her mind set on something.

Rather than try to fake my way until I make it as a critic (something that felt awfully disingenuous to me) I convinced them to let me just meditate each month on something that ties in with the issue’s theme and I lucked out with the first issue being all about conservation - something I actually went to school for.
